Winter Blend Mixed Nuts
I saw these Holiday Mixed Nuts in Costco a few weeks ago, looked at the ingredients, and figured I could just easily make them myself using way less sugar. Happy to report, these turned out beautifully (my parents tried them when they were here and loved them) and you probably already have all of the ingredients at home!
The original has almonds in it but I didn’t have any so I used peanuts. Feel free to sub for almonds if you wish. I used monk fruit to keep this lower sugar but you can use whatever sugar you want!
Ingredients
- 1 cup1 cup1 cup Roasted and Salted Cashews
- 0.25 cup0.25 cup0.25 cup Peanuts, can sub almonds
- 0.5 cup0.5 cup0.5 cup Pecans
- 2 Tbsp2 Tbsp2 Tbsp Salted Butter, melted
- 1.5 tsp1.5 tsp1.5 tsp Classic Monkfruit Sweetener (with Erythritol) - Lakanto
- 1 tsp1 tsp1 tsp Molasses
- 0.5 tsp0.5 tsp0.5 tsp Ground Cinnamon
- 1 pinch1 pinch1 pinch Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix everything together in a bowl and spread on a parchment lined baking sheet. Bake at 300 for 15 min, cool on baking sheet, and store in a sealed container on the counter. Lasts for weeks!
