Edamame Cauliflower Fried Rice- a nutrient-packed twist on traditional fried rice!  Made with riced cauliflower, protein-rich edamame, and a savory blend of seasonings, this dish is an easy, veggie-filled meal that comes together in minutes. Perfect for a quick lunch or dinner, it's gluten-free, dairy-free, and totally satisfying!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat the oil in a large pan over medium heat. Add garlic, green onions, carrots, and mushrooms. Sauté for 3-4 minutes until softened.
  2. Add cauliflower rice and stir well. Cook for another 3 minutes, stirring occasionally.
  3. Stir in edamame, coconut aminos, sesame oil, and ginger. Cook for another 2-3 minutes until heated through.
  4. Push ingredients to one side of the pan and scramble the eggs on the other side. Once cooked, mix everything together.
  5. Garnish with sesame seeds or red pepper flakes, if desired.
  6. Serve warm and enjoy!
