These breakfast cookies are the perfect treat to feed those picky kids. If you have a ripe banana, don’t make banana bread, make these. You won’t regret it! They’re even great for an on the go snack or to punch in their lunchbox!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper. Set aside.
  2. In a mixing bowl, add the banana and mash it. Add in eggs, maple syrup and vanilla extract. Whisk together. Add in your oats, almond flour, vanilla protein powder, baking powder, chia seeds, hemp hearts and cinnamon. Stir until your cookie dough is formed. **Add chocolate chips if you are using them.
  3. Scoop cookie dough onto cookie sheet. This cookie dough is more moist than most dough, you will need to use a cookie scoop or spoon. Place pan in the oven and bake for 12-15 minutes, or until golden brown. Let them cool and enjoy!

Notes

These cookies are even great for your baby who has started solids. You will want to leave out the chocolate chips if giving to a baby though!
