Shamrock Eggs
This St. Patrick’s Day breakfast is so cute, nutrient dense, and easy! I love how fun it is with only needing a few ingredients that I am sure you already have.
Ingredients
- 1 whole1 whole1 whole Bell Pepper, green, sliced into rings
- 2 whole2 whole2 whole Eggs, pasture raised
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a pan over medium heat, heat choice of oil or fat if needed for stick
- Place bell peppers in pan and cook for 1 minute on each side
- Crack eggs into center of pepper, season with your favorite spices
- Reduce the heat to medium-low and place a lid on the pan and cook until the egg whites are set, and the yolks are cooked to your preference, about 3-5 minutes
- Serve with green yummy sides such as avocado and kiwi!
