This St. Patrick’s Day breakfast is so cute, nutrient dense, and easy! I love how fun it is with only needing a few ingredients that I am sure you already have.

  • 1 whole Bell Pepper, green, sliced into rings
  • 2 whole Eggs, pasture raised

Process

  1. In a pan over medium heat, heat choice of oil or fat if needed for stick
  2. Place bell peppers in pan and cook for 1 minute on each side
  3. Crack eggs into center of pepper, season with your favorite spices
  4. Reduce the heat to medium-low and place a lid on the pan and cook until the egg whites are set, and the yolks are cooked to your preference, about 3-5 minutes
  5. Serve with green yummy sides such as avocado and kiwi!
