Dairy-Free Grasshopper Cookies
These dairy-free bakery style cookies are so fun and festive for St Patrick's Day. Grasshopper Cookies are the perfect St Patrick's Day treat! These cookies are the perfect combination of chocolate brownie cookie and mint buttercream, not to mention a festive green!
Ingredients
Chocolate Cookie Ingredients:
- 8 Tbsp8 Tbsp8 Tbsp Vegan Buttery Spread
- 1 cup1 cup1 cup Granulated White Sugar
- 1 whole1 whole1 whole Egg
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1.25 cup1.25 cup1.25 cup Pancake Mix
- 0.5 cup0.5 cup0.5 cup Cocoa Powder
Mint Buttercream Ingredients:
- 4 Tbsp4 Tbsp4 Tbsp Vegan Buttery Spread
- 1.5 cup1.5 cup1.5 cup Powdered Sugar
- 0.125 tsp0.125 tsp0.125 tsp Artificial Dye-Free Food Coloring, green
- 1 tsp1 tsp1 tsp Peppermint Extract
- 1 - 3 Tbsp1 - 3 Tbsp1 - 3 Tbsp Almond Milk

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make your cookie first.
- Beat together the vegan butter and sugar.
- Add in the egg and vanilla and beat until fluffy.
- Stir in the rest of the dry ingredients until your dough comes together.
- Chill your dough while you preheat the oven to 350F.
- Scoop out large scoops (about 1.5 oz) onto parchment lined baking sheet.
- Bake for 13 minutes, then let cool on pan for at least 5 minutes before transferring to cooling rack.
- While those cool, make your frosting by beating together the frosting ingredients.
- The amount of almond milk you add depends on what consistency you want your frosting to have.
- Once cookies have cooled, frost, top with additional chocolate if desired, and enjoy!
