Carrot Spiced Toddler Muffins
This is my attempt to get my toddler to eat veggies. I figured if I can hide carrots in a muffin, then he will never know. He loved them! They were perfect! I even added sprinkles on top to make them more enticing for him!
Ingredients
- 0.5 cup0.5 cup0.5 cup Carrots, Cooked and Shredded
- 2 whole2 whole2 whole Eggs
- 0.333 cup0.333 cup0.333 cup Agave Nectar Syrup
- 1 tsp1 tsp1 tsp Vanilla Extract

- 1 cup1 cup1 cup Old Fashioned Oats

- 1 cup1 cup1 cup All Purpose Flour
- 1 tsp1 tsp1 tsp Baking Powder

- 1 tsp1 tsp1 tsp Cinnamon, Ground

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350 degrees.
- I put my steamed carrots into a blender and pulsed them to get the perfect texture.
- In a mixing bowl, add your shredded carrots, eggs, agave and vanilla extract. Whisk together until it’s perfectly combined.
- Next, add your oats, flour, baking powder and cinnamon. Whisk together until it’s all combined.
- Pour into a greased muffin tin. Top with sprinkles if your toddler enjoys those. Place in the oven and bake for 15-18 minutes.
- Let them enjoy!
