Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Sauté the base. In a medium pot, melt vegan butter. Add onions and thyme and cook over medium heat until translucent and fragrant—about 5 minutes.
  2. Add the mushrooms. Stir in the sliced mushrooms and a pinch of salt. Sauté until softened and golden, about 8–10 minutes. Season & sprinkle. Add nutritional yeast, a touch of fresh nutmeg (grated), and the flour. Stir to coat everything and cook for 2–3 minutes to eliminate the raw flour taste.
  3. Pour in Maïzly. Slowly add Maïzly Original while stirring. Let it simmer gently for 5–8 minutes until thickened and creamy. Add pepper and adjust salt as needed.
  4. Blend it (optional). For a silky soup, blend most of it and leave a few mushrooms unblended for texture—or blend it all for extra creaminess.
  5. Garnish & serve. Top bowls with sautéed mushrooms, crunchy croutons, a drizzle of good olive oil, and a few thyme leaves. Serve warm and cozy.
