Easy White Bean Chili
This is such an easy and delicious weeknight meal! Full of protein and fiber. You can top it with whatever your heart desires!
Ingredients
- 1 lb1 lb1 lb Chicken Breast

- 2 cups2 cups2 cups Salsa, I used salsa verde
- 3 cups3 cups3 cups Chicken Broth, I used homemade chicken bone broth

- 2 cups2 cups2 cups White Beans, I used white navy beans
- 444 Zucchini, Medium size and shredded up
- 111 Radish
- 111 Cabbage
- 111 Black Olives

- 111 Sour Cream
- 111 Avocado
- 111 Cilantro
- 111 Jalapeño Pepper
- 111 Pepper Jack Cheese, I used Miyokos vegan cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1) Place chicken breast and salsa in a medium dutch oven
- 2) Get to a simmer and turn it down to low
- 3) Simmer, covered, for 3 hours or until chicken easily shreds (add water if liquid reduces)
- 4) Shred chicken up using 2 forks
- 5) Add zucchini, broth, beans, and a little more salt and pepper
- 6) Stir all together and simmer, uncovered, for 30 minutes or until it has thickened up a bit
- 7) Season with additional salt and pepper, if needed
- 8) Top with your toppings and enjoy!
