Blueberry Delight – The Easiest Dessert Ever (Edit recipe)

Blueberry delight is what I think of when I want a super-easy, no-fuss, no-mess dessert. With only three ingredients, this dessert does not need much explanation. The perfect dessert for all your summer gatherings. But why stop there? Fresh blueberries are covered with a thick layer of ricotta cheese and then sprinkled with brown sugar. Broil and the top sugar will melt and start to bubble. You cannot wait to bite into the soft berries, which have softened with the broiler’s heat. The ricotta is sugary and to perfection. I enjoy preparing this fresh blueberry dessert in ramekins for each of us.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Bring the ricotta to room temperature.
  2. Preheat the broiler and place the rack about 6 to 8 inches away from the heat source.
  3. Spread the blueberries in a shallow baking dish or divide them among 4 ramekins.
  4. Top with the ricotta that you will spread well all over the fruits to cover well. Sprinkle with brown sugar breaking up any clumps with your fingers.
  5. Place your baking dish or ramekins, on a cookie sheet and place the cookie sheet under the broiler, until the sugar melts, bubbles are forming, and you can see the caramelization starting to take place, about 5 minutes.
  6. Let it cool off and enjoy.

Notes

Storage and reheating options
I giggle as I write this segment, as we have not had leftovers yet. Quite the opposite, we crave more.
With that said, you can store your leftovers in the refrigerator and bring them back to room temperature before placing them under the broiler to warm up.
Add a little more sugar to re-create the caramelization of the day before.
