Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Start by filling a medium saucepot with cold water and place on the stovetop on high heat to bring to a boil for the orzo.
- In a separate, large frying pan, add diced pancetta and cook over medium-high heat until crispy and browned, about 5-7 minutes. Spoon the crispy pancetta onto a plate lined with paper towels, leaving about a tablespoon of the fat and brown bits in the pan.
- Add olive oil to the hot pan and let it get hot for a second, and then add minced shallots and garlic. Saute for one minute.
- Slowly add the wine, scraping up all the browned bits with a wooden spoon. Reduce the wine on medium-high heat for about 3 minutes.
- Add heavy cream, season with salt, and turn the heat on very low. Let it sit while the orzo cooks.
- Add salt to the boiling water and cook the orzo until al dente, about 7 minutes. Reserve 1 cup of the pasta water. Drain orzo and add to the saucepan.
- Mix orzo into the sauce and add ½ cup of the pasta water to the mixture. Add more pasta water to desired consistency.
- Mix in the grated parmesan cheese.
- Tear apart the burrata ball into chunks and place it on top of the warm orzo.
- Sprinkle the crispy pancetta on top.
- Tear or chop up fresh basil leaves and sprinkle on top. Enjoy!
Notes
To give the dish a special touch, try adding a drizzle of olive oil on top. It really brings everything together!
