This healthy high protein summer dinner is the highlight of the month. A gorgeous seared and herbed steak served over lightly dressed pasta, it’s such an easy summer meal and is even easier to make dairy free! What’s not to love about an easy dairy free dinner?? And it’s special enough to be a date night at home meal too!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cook steak as desired, but we recommend cooking it in a combination of olive oil and butter.
  2. Let rest while you cook the spaghetti.
  3. Boil spaghetti per package instructions, then drain.
  4. Add butter and garlic & herb seasoning to spaghetti and set aside.
  5. Add cherry tomatoes and green beans to baking sheet with 1-2 tbsp olive oil and a squeeze of lemon juice & salt if desired.
  6. Roast at 375°F for 20-25 minutes, until tender and roasted.
  7. Toss veggies in with the pasta and all juices / sauces.
  8. Slice your rested steak and serve on top.
  9. Combine your 4 tbsp vegan butter with the French onion seasoning to make an herbed butter topping for the steak!
