Blackberry Cocktail with Fresh Thyme and Lemon

- 1 cup1 cup1 cup Sugar, Raw
- 5 sprigs5 sprigs5 sprigs Thyme, Fresh

Blackberry Cocktail
- 6 whole6 whole6 whole Blackberries
- 1 oz1 oz1 oz Simple Syrup, the thyme simple syrup from above

- 1 oz1 oz1 oz Lemon Juice, freshly squeezed
- 2 sprigs2 sprigs2 sprigs Thyme, Fresh

- 2 oz2 oz2 oz Vodka

- Thyme Simple Syrup
- Add water, sugar, and thyme sprigs to a sauce pot over medium heat.
- Stir until sugar is dissolved.
- Let simmer for 10 minutes.
- Remove from heat, and let it sit for about 10 more minutes.
- Strain and cool.
- Once cooled, pour into a sealed jar and store in the fridge for up to two weeks.
- Blackberry Cocktail
- Add the blackberries, thyme, simple syrup, and lemon juice to a cocktail shaker. Muddle until the berries release their juices and become jam-like.
- Pour in the vodka and add the fresh thyme sprigs. Add a handful of ice.
- Shake for a good 10 seconds.
- Fill your cocktail glass with fresh ice and strain the mixture over the top.
- Top with club soda.
- Garnish with extra blackberries and a sprig of thyme. Serve right away.
Notes
Plain simple syrup will work just as well with this recipe.
