muffuletta tuna salad
muffuletta magic 🫒✨ the iconic tangy, briny, salty olive salad (packed with ingredients I can’t pronounce but absolutely love — looking at you, giardiniera 👀) meets layers of meats + cheese… with an extra protein boost from a good ole can of tuna.
make it your way:
1️⃣ rolled up in coconut wraps
2️⃣ pressed into your favorite bread (ahem.. the best grain-free bread)
3️⃣ scooped up as a dip with your dipping vessel of of choice
easy, healthy, & flavor-packed!
Ingredients
muffuletta mix
- 0.5 cup0.5 cup0.5 cup Giardiniera (Pickled Vegetables), finely chopped
- 0.25 cup0.25 cup0.25 cup Olive Paste Classic (Black + Green) - Argilos, any flavor will work

- 2 Tbsp2 Tbsp2 Tbsp Peperoncini Peppers, finely chopped
- 1 Tbsp1 Tbsp1 Tbsp Capers
- 1 Tbsp1 Tbsp1 Tbsp ARGILOS II GREEN Extra Virgin Olive Oil (500ml) - Argilos

- 1 Tbsp1 Tbsp1 Tbsp Red Wine Vinegar
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Herbs, Fresh, I used a mix of basil, parsley, & oregano
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper
tuna salad
- Tuna, Canned, drained

- Ham, or capicola, diced
- Genoa Salami, diced

- Prosciutto, or mortadello, diced
- Plain Greek Yogurt
- Peperoncini Juice

for serving
- Provolone Cheese, may sub swiss or mozzarella

- Coconut Wraps, Original - Thrive Market, to make a wrap

- homemade grain-free bread (click for recipe), to make a sandwich
- Sweet Potato Chips - Jackson's, to make a dip, may sub any chip, cracker, or veggie

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in one bowl, mix together all ingredients for muffuletta mix.
- in a separate bowl, mix together all ingredients for tuna salad.
- place a coconut wrap in the diamond position, then add a couple spoonfuls of muffuletta mix, tuna salad mix, & cheese of choice.
- wrap roll from the bottom, then fold in sides & continue to roll.
- leave about a 1” top seem to dab a little water on to hold the roll together.
- heat a skillet over medium heat, then pan fry wraps for 30-60 seconds on each side.
- serve with a side of extra muffuletta mix to dip with.
- in a bowl, mix a big scoopful of muffuletta mix into tuna salad; option to warm in microwave for 30-60 seconds.
- to a slice of bread, add muffuletta tuna salad & top with cheese of choice.
- either make as an open-faced sandwich or add another slide of bread on top.
- to a hot panini (I put mine at 400), add sandwich (press panini down if making a sandwich) & cook until golden, gooey, & crispy brown.
- serve with a side of extra muffuletta mix to dip with.
- in a bowl, mix a big scoopful of muffuletta mix into tuna salad; option to warm in microwave for 30-60 seconds.
- serve with chips, crackers, &/or veggies.
