  1. Preheat oven to 350°F (175°C) and line an 8x8 pan with parchment.
  2. In a large bowl, mix pumpkin puree, nut butter, eggs, maple syrup, and vanilla until smooth.
  3. Stir in cocoa powder, protein powder, instant coffee, cinnamon, pumpkin spice, baking soda, and salt.
  4. Mix until just combined.
  5. Fold in chocolate chips.
  6. Spread into pan and bake 25–28 minutes, until set but still fudgy in the middle
  7. Let cool before slicing into squares.
