Turkey Bolognese
This lean, flavor-packed turkey bolognese is perfect for meal prep or an easy weeknight dinner. The recipe’s for the meat mixture — so top it with your favorite carb: pasta, rice, or butternut squash noodles like I did here.

Ingredients
- 1 lb1 lb1 lb Ground Turkey, 85% lean

- 1 whole1 whole1 whole Vodka Sauce, whole jar
- 4 Tbsp4 Tbsp4 Tbsp Garlic, crushed

- 1 whole1 whole1 whole Onion, small
- 2 Tbsp2 Tbsp2 Tbsp Aglio Olio Garlicky & Spicy Seasoning Blend - Trader Joe's
- 2 Tbsp2 Tbsp2 Tbsp Italian Seasoning, tuscan

- 1 cup1 cup1 cup Chicken Broth

- 2 cups2 cups2 cups Baby Spinach, chopped
- 4 Tbsp4 Tbsp4 Tbsp Parmesan Cheese, grated

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Drizzle olive oil and heat over medium to high, add onions and sautee for 2-3 minutes until onions start to turn translucent.
- Add ground turkey and crumble with meat grinder
- Continue to brown for 8 minutes. Add garlic, seasonings and salt and pepper
- Once turkey has browned well, add vodka sauce, chopped spinach, and chicken broth.
- Let the mixture simmer for another 6-8 minutes.
- Serve on top of your favorite pasta or veggie noodles! (See my notes for tips here and what we did). Sprinkle with grated parmesan cheese!
Notes
For the family, I used pappardalle pasta, but you could do this with any pasta. For myself, I sauteed some frozen butternut squash noodles. Leftover Tips: Don't mix it all in with the pasta so that you can repurpose the Bolognese mixture for other meals. I ate my leftovers with half a baked sweet potato the next night. You could make a version of sloppy joe's with this or put it into a toasted hoagie. This recipe is very versatile! Enjoy!
