  1. Preheat the oven to 375 F.
  2. Place the cherry tomatoes, halved Roma tomatoes, quartered onion, crumbled Boursin cheese, and peeled garlic into a baking dish.
  3. Drizzle olive oil over the tomatoes and garlic, then season with salt and pepper. Toss everything together to evenly coat.
  4. Lay the fresh herbs (thyme, oregano, basil, and rosemary) on top of the mixture.
  5. Roast for about 30-40 minutes, or until everything starts to caramelize and become tender.
  6. Remove the herbs on top and discard stems.
  7. Transfer the roasted tomato mixture and herbs to a blender or food processor, or blend in the baking dish with an immersion blender. Blend until smooth.
  8. Serve hot with your favorite grilled cheese or warm bread.
