- Preheat the oven to 375 F.
- Place the cherry tomatoes, halved Roma tomatoes, quartered onion, crumbled Boursin cheese, and peeled garlic into a baking dish.
- Drizzle olive oil over the tomatoes and garlic, then season with salt and pepper. Toss everything together to evenly coat.
- Lay the fresh herbs (thyme, oregano, basil, and rosemary) on top of the mixture.
- Roast for about 30-40 minutes, or until everything starts to caramelize and become tender.
- Remove the herbs on top and discard stems.
- Transfer the roasted tomato mixture and herbs to a blender or food processor, or blend in the baking dish with an immersion blender. Blend until smooth.
- Serve hot with your favorite grilled cheese or warm bread.
