Easy Butternut Squash Soup (Edit recipe)

Super easy and one that the whole family will love! It gets most of its flavor from the Italian sausage, and the butternut squash gets blended in, so your kids will never know they are eating squash;)

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat a dutch oven or large saucepan over medium heat
  2. If sausage has casing remove it. Crumble up sausage while cooking until no longer pink
  3. Remove the sausage from the pan with a slotted spoon and set aside.
  4. Add onions, garlic, salt, and sage to leftover oil in pan
  5. Cook until onions and garlic start to brown
  6. Pour broth and butternut squash in
  7. Cover and simmer for 15 mins
  8. Using an immersion blender, blend the broth and squash mixture
  9. Add sausage mixture back in and simmer for 15 mins, covered
  10. While that simmers, cook some pasta in a separate pot
  11. Add cooked pasta, mix it all, and top with parmesan cheese
  12. Enjoy!
