High-Protein Red Pesto Pasta
This high-protein pasta is creamy, flavourful, and ready in just 20 minutes. This nourishing meal features nutrient-rich fusilli and a sun-dried tomato pesto sauce, offering comforting flavour that's simple to prepare. It's the perfect satisfying meal for busy weeknights or whenever you crave an easy, delicious option
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Butter, Salted

- 3 Tbsp3 Tbsp3 Tbsp Sundried Tomato Tapenade, (oil from the jar, or use neutral oil)
- .5 cup.5 cup.5 cup Sun-Dried Tomatoes, chopped
- .333 cup.333 cup.333 cup Sun-Dried Tomato Pesto, I used Solenzi
- 2 Tbsp2 Tbsp2 Tbsp Pasta Water
- .5 cup.5 cup.5 cup Milk, oat (or your choice of milk)

- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 1 pinch1 pinch1 pinch Salt, basil (optional)

- 227 grams227 grams227 grams Pasta, SOLENZI Gluten Free Artisan Red Lentil Fusilli, 1 box

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat a medium-sized pan over medium heat with butter and sun dried tomato oil.
- Add in the red pesto to your pan and mix until well incorporated.
- Bring a medium-sized pot of water to a boil and add salt. Once water boils, begin to cook your SOLENZI protein pasta for 7-9 minutes. Reserve some pasta water while it cooks.
- Add in your oat milk into the pan and mix together. Let cook down for another 5 minutes until the sauce becomes somewhat thick.
- Drain your pasta and add it into the pan.
- Season with the basil salt, regular salt and ground pepper.u00a0
- Add in your pasta water along with your sun dried tomato chunks
- Top with a bit more sun-dried tomato oil, salt and pepper before enjoying.
