Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your Dash mini donut maker (donut pan) and spray it with coconut oil.
  2. Blend the wet ingredients: cottage cheese, vanilla, and egg until smooth in a food processor.
  3. Add the dry ingredients: almond flour, sweetener, cinnamon, baking powder, and salt. Blend until the batter is smooth.
  4. Check the texture. A thinner batter rises better, so if it looks too thick, add a splash of almond milk.
  5. Add about two teaspoons of batter to each mold.
  6. Cook until golden brown. Donuts will be very soft at first, but will firm up as they cool.
  7. Mix cinnamon and sweetener in a small bowl. Dip the top half of each donut in melted butter, then into the cinnamon-sugar mixture.

Notes

You can air fry these instead of baking. Try 160°C (320°F) for about 10 minutes. For best results, let the donuts cool fully before coating with cinnamon “sugar”. Swap almond flour with coconut flour – recipe: Cinnamon Cottage Cheese Donuts with Coconut Flour These pair well with whipped cream, coffee, keto Nutella, or vanilla ice cream.
