- Preheat your oven to 350°F (175 °C). Grease a loaf pan or line it with parchment paper.
- In a blender or food processor, add the cottage cheese first and blend until smooth. Then, add the eggs and melted coconut oil (or butter). Blend again until everything is well mixed.
- In a large bowl, whisk together the coconut flour, baking powder, salt, and xanthan gum (if using). Make sure there are no lumps.
- Slowly pour the wet mixture into the bowl with the dry ingredients. Stir gently until everything is combined. The batter will be thick, which is normal.
- Pour the batter into the prepared loaf pan. Use a spatula to smooth the top. Bake for 40-50 minutes. To check if itu2019s done, insert a toothpick into the center. If it comes out clean, the bread is ready.
- Let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
Notes
Use room temperature ingredients for best results. If the batter is too thick, add a little water or liquid egg whites. For a savory twist, add some garlic powder or onion powder to the batter.
