This is my go-to when I want something fast, savory, and actually filling.
Creamy cottage cheese whipped with spice, spread on toast, topped with melty cheese and baked until golden. Simple ingredients. Big flavor. High protein.
Perfect for breakfast, lunch, or a quick dinner with a side salad.

Ingredients
- 110 grams110 grams110 grams Cottage Cheese, Low-Fat
- 28 grams28 grams28 grams Mexican Cheese Blend, Any shredded cheese
- 2 Tbsp2 Tbsp2 Tbsp Onion, diced
- 1 Tbsp1 Tbsp1 Tbsp Jalapeño Pepper, diced
- 1 Tbsp1 Tbsp1 Tbsp Baby Bell Peppers, diced
- 1 Tbsp1 Tbsp1 Tbsp Roma Tomato, diced
- 1 tsp1 tsp1 tsp Cilantro, chopped
- 2 pieces2 pieces2 pieces Sourdough Bread, one slice of any bread
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix all ingredients together in a bowl. Add salt and pepper.
- Pick your favorite slice of bread and top with the mixture
- Air fry at 400 degrees for 5 minutes
Notes
Have fun with the veggies! I just use whatever veggies I have on hand but I never skip the fresh jalapeños in this. It’s the key to this toast coming out so tasty. Watching the carbs? I’ve done this on Hero bread before and it turns out just as great.
