- 1 tsp1 tsp1 tsp Black Pepper

- 4 Tbsp4 Tbsp4 Tbsp Whole Milk
- 1 tsp1 tsp1 tsp Baking Powder

- 3 pieces3 pieces3 pieces Onion, Spring
- 200 grams200 grams200 grams Baby Spinach, fresh or frozen, 5 pieces if frozen
- 1 Tbsp1 Tbsp1 Tbsp Cream Cheese, Full Fat
- 0.5 tsp0.5 tsp0.5 tsp Himalayan Pink Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 1 Tbsp1 Tbsp1 Tbsp Garlic

- 500 ml500 ml500 ml Heavy Whipping Cream

- 30 grams30 grams30 grams Cheddar Cheese

- 1 Tbsp1 Tbsp1 Tbsp Oregano, Dried

- 1 tsp1 tsp1 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 0.5 tsp0.5 tsp0.5 tsp Himalayan Pink Salt

- 1. Prepare the filling:
- In a pan, sauté leeks, spring onions, and garlic until soft.
- Add spinach and cook until wilted (if frozen, use 5 pieces and cook until defrosted and soft).
- Stir in cream cheese and season with black pepper (and salt if needed). Remove from heat and let it cool slightly.
- 2. Prepare the dough:
- In a bowl, mix flour, baking powder, salt, and black pepper.
- Rub in butter until the mixture looks like breadcrumbs.
- Add 1 egg and gradually add milk until a smooth dough forms.
- Roll out the dough and line a greased quiche or tart pan. Prick the base lightly with a fork.
- 3. Assemble the quiche:
- Pour the leek and spinach filling into the dough.
- 4. Prepare the custard topping:
- Whisk together eggs, cream, grated cheese, salt, black pepper, oregano, and garlic powder.
- Pour evenly over the filling.
- 5. Add prawns:
- Arrange the prawns on top of the custard and cheese.
- Bake the quiche:
- Bake at 180°C for 45 minutes, until the top is golden and the filling is set.
- Let it cool slightly before slicing.
