These Healthy Chicken Salad Sliders are light, creamy, and deeply nourishing, made with thoughtfully sourced ingredients that truly shine. I started with US Wellness Meats pasture-raised chicken breast, gently parboiled with aromatics and Primal Palate Adobo Seasoning for clean, savory flavor.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook the Chicken: Place the chicken breasts in a saucepan with 1 stalk of celery, 1/2 onion (skin on), adobo seasoning, salt, and pepper. Cover with water and gently parboil until the chicken is just cooked through. Remove chicken, let cool slightly, then shred or cube. Reserve broth for another use.
- Make the Dressing: In a large bowl, whisk together the mayonnaise, Icelandic yogurt, and a splash of cornmilk until smooth and lightly creamy. Optionally, can just add all the ingredients when you build the chicken salad (next step).
- Build the Chicken Salad: Add the cooked chicken, diced celery, red onion, sprouted almonds, and freeze-dried blueberries to the bowl. Sprinkle in adobo seasoning and gently fold until well combined. Adjust seasoning and creaminess as needed.
- Chill (Optional): For best flavor, refrigerate for 20–30 minutes to allow everything to meld.
- Assemble the Sliders: Line rolls with green leaf lettuce, spoon on the chicken salad, and serve immediately.
