- Raspberry Shrub: Add the sugar, apple cider vinegar, and frozen raspberries to a small saucepan.
- Bring to a gentle simmer over low–medium heat and cook for about 10 minutes, stirring occasionally, until the raspberries have broken down and the sugar is fully dissolved.
- Carefully transfer the mixture to a blender and blend until smooth.
- Strain through a fine-mesh sieve to remove the raspberry seeds.
- Transfer to a jar and refrigerate. The flavor deepens once fully chilled—it’s best the next day.
- Mocktail: In a cocktail shaker or jar, combine the freeze-dried blood orange slice, grapefruit slices, raspberry shrub, and water.
- Let sit for 2–3 minutes to allow the citrus to rehydrate.
- Muddle gently, pressing to release the citrus juices. (The back of a spoon works well if you don’t have a muddler.)
- Add ice and shake vigorously for about 15 seconds.
- Strain into a glass filled with fresh ice.
- Top with 3–4 oz ginger beer and serve immediately.
Notes
A spicy ginger beer made for cocktails really shines here and balances the sweetness of the shrub.
This mocktail is also delicious topped with sparkling water or Spindrift—feel free to experiment with different bubbly mixers.
Thanks to the high vinegar content, the raspberry shrub will keep well in the refrigerator for up to 2 or more months when stored properly… though it rarely lasts that long in our house.
