Chicken and Rice Casserole (Edit recipe)

This dish is so easy to throw together on those very busy weeknights!  It's loaded with the BEST flavor that the whole family will absolutely devour.  If you're planning to make my slow cooker whole chicken, this is the perfect recipe to use that in.  ENJOY!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a medium sized mixing bowl add the chili powder, paprika, salt, garlic powder, onion powder, and cumin.  Mix until fully combined. 
  2. Add the sour cream and the heavy whipping cream to the seasoning.   Mix until fully combined. 
  3. Add the chicken and mix until the chicken is evenly coated. 
  4. In a large bowl add the rice, corn, peppers, and onion.  Mix well.
  5. Add the chicken to the rice and mix until fully combined. 
  6. Add the chicken mixture to a medium sized backing dish. 
  7. Top with the shredded cheese. 
  8. Bake at 375 for 35 – 40 minutes.
  9. Serve with tortilla chips, veggies, salsa, guacamole, and sour cream.   
  10. ENJOY!
