Chopped French Dip Sandwich with Seasoned JoJo’s (Edit recipe)

We've been on a chopped sandwich kick and we just can't stop!  These chopped french dips are unbelievable!  Plus, they're accompanied by the most perfectly seasoned Primal Palate meat & potatoes crispy JoJo's.   It's a gameday dream!  ENJOY!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Start by sautéing the veggies.  Place the mushrooms, onion, and oil into a medium sized sauté pan.  Don’t add the coconut aminos yet. 
  2. Sauté over medium heat while you’re prepping everything else.  These can just sauté the whole time. 
  3. The onions need to become translucent, and both veggies should shrink to half their size. 
  4. Make the au just by adding all of the ingredients to a small sauce pan and heat over low.  Stirring occasionally. 
  5. Prep the JoJo’s by adding the oil and seasonings to a small bowl, and mix well until fully incorporated. 
  6. In a medium sized bowl add the russets and pour the oil mixture over the potatoes and ensure they are evenly coated.
  7. Add the russets to the air-fryer on the French fry setting which is 400 for about 18-20 minutes.  Occasionally shaking the basket.    
  8. Add the 2 Tablespoons of coconut aminos to your mushroom and onions.  Mix and continue to sauté while it caramelizes. 
  9. While the veggies and JoJo’s are cooking, start the beef.
  10. Add the beef to a medium sized fry or sauté pan and start browning over medium low heat. 
  11. While the beef is browning add all of the seasonings and coconut aminos to a small bowl and mix until fully incorporated.  Set aside.
  12. Remove the mushroom and onions from the heat. 
  13. Butter one side of the sliced sourdough and set on a large frying pan.  You might have to work in batches or use more than one pan. 
  14. Add a slice of cheese to 4 of the slices, then the mushrooms and onions. 
  15. Remove the beef from the heat, and carefully place the crumbled beef on top of the 4 slices of bread with the veggies and cheese.
  16. Place the remaining slices of cheese on top of the beef and veggies.  This will help hold it all together when dipping in the au jus. 
  17. Lightly cover the bread pan with foil and pan fry on medium until the bread is golden brown and the cheese has melted. 
  18. Check to see if the JoJo’s need anymore time.  They should be golden brown and crispy. 
  19. Plate the slices of bread with the beef mixture.  Top with the other slice. 
  20. Serve with a small bowl of au jus and a side of JoJo’s. 
  21. ENJOY!
