i love a little bite-sized sweet treat — especially when it’s as delicious as these. 🍒

cherry cobbler meets my brown butter protein cookies for the most delicious (& of course nutritious) twist on a classic dessert. soft cookie cups filled with smash superfoods cherry compote, topped with a cozy cinnamon cobbler crumble made from BTR bars, & finished with a silky white chocolate further food's collagen drizzle.

sweet, buttery, fruity, & perfectly poppable — a gluten-free, sugar-free, protein-boosted dessert that feels just as indulgent as the original.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. follow my instructions for making brown butter cookies (don't add any add-ins to your cookie dough).
  3. place cookie dough in refrigerator for 30 minutes.
  4. using a small cookie scoop, add 2 scoops of cookie dough to your hands, then roll into balls & place in a mini 24 divot muffin tin.
  5. bake cookies for 9-11 minutes.
  6. allow to cool for 3-4 minutes, then press down in the center of each cookie to create a cup.
  7. follow my instructions for making "mixed berry compote", but substitute cherry jam + frozen dark cherries where needed.
  8. to each cookie cup, add a scoop of cherry compote.
  9. in a food processor, add BTR bars, monk fruit, cinnamon, & sea salt; blitz into a crumble.
  10. transfer to a bowl, then add in almond butter & a little bit of water until more of a crumble forms.
  11. sprinkle crumble on top of each cookie cup; then bake for an additional 8-10 minutes to brown the crumble topping.
  12. allow to cool completely.
  13. to make ganache, start by melting white chocolate chips, then mix in collagen peptides, & water until reaches a nice drizzly consistency.
  14. drizzle or pipe on top of each cooled bite, then place in the fridge to set & enjoy!
