I love Mahi-mahi but my husband does not like fish. Well, he likes battered and deep fried fish covered in tartar sauce, but that isn’t very healthy! Using cornmilk as a marinade can really soften the ‘fishy’ flavor and bring a little sweetness to the cooked fish. Plus this dish is super fast and very healthy, you can easily double it as needed. Hope you enjoy.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. About 30 minutes before you want to cook the fish put the fish, cornmilk, lime, and seasonings in a glass bowl with lid and let it marinate in the fridge.
  2. Prepare the cauliflower.
  3. When ready put a nonstick skillet on stove on medium heat, for the fish. And add water to a saucepan with lid on medium-high heat for cauliflower.
  4. Place cauliflower in pan and cover to steam while you cook the fish.
  5. Carefully pick up one filet and let the cornmilk drain off then place into pan.
  6. Repeat.
  7. Let fish cook for 3 minutes. Check under side to see if slightly crispy.
  8. If so carefully flip it (limes and all).
  9. Let for 3 minutes more until firm to touch.
  10. Meanwhile stir the cauliflower.
  11. Carefully flip the fish again and turn heat off of both burners.
  12. Serve and enjoy. I like to add a little ghee and salt to my cauliflower.

Notes

If you don’t have freeze-dried limes then it is best to wait until serving to use the lime. I like to add the fresh squeezed juice of half a lime to the fish when I plate it.
