Mediterranean Cottage Cheese Toast on Keto Cottage Cheese Mug Bread
Mediterranean cottage cheese toast is my “fresh, salty, snacky” version of high protein keto breakfast toast. Think tomatoes, olives, red bell pepper with a little avocado, all piled onto creamy cottage cheese. It tastes like a mini Greek salad… but on toast. I make it on my Keto Cottage Cheese Mug Bread, so it stays high protein and low carb without relying on regular bread.
Ingredients
- 111 Keto Cottage Cheese Mug Bread (click for recipe), (or bread of your choice)
- .5 cup.5 cup.5 cup Cottage Cheese, full-fat (about 8 tbsp)
- 444 Diced Tomatoes
- .25.25.25 Avocado, about 2 slices per toast)), sliced
- 222 Red Bell Pepper, slices ((1 slice per toast; thin strips))
- 444 Olives, 2 green + 2 black, sliced

- 1 tsp1 tsp1 tsp Everything Bagel Seasoning

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make the keto cottage cheese mug bread. Slice it in half to make 2 slices. Optional: lightly toast.
- Spread half of the cottage cheese on each slice.
- Add the sliced cherry tomatoes, sliced olives, avocado slices, and red bell pepper strips.
- Sprinkle with everything bagel seasoning (optional) and serve right away.
Notes
- Bread note: This recipe uses my Keto Cottage Cheese Mug Bread as the base. Make that first, then slice it into 2 pieces for these toasts.
