- 1 cup1 cup1 cup Cottage Cheese, full-fat
- .333 cup.333 cup.333 cup Pistachios, Roasted
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil
- .75 cup.75 cup.75 cup Almond Milk, unsweetened
- 3 Tbsp3 Tbsp3 Tbsp Allulose

- .5 tsp.5 tsp.5 tsp Vanilla Extract, sugar free

- 1 pinch1 pinch1 pinch Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add pistachios to a food processor. Blend until finely ground.
- Add cottage cheese, almond milk, coconut oil, allulose, vanilla, and sea salt. Blend until smooth.
- Pour the mixture into a Ninja Creami pint container. Secure the lid.
- Freeze flat for 24 hours.
- After freezing, place the container into the outer bowl. Lock the lid and insert it into the Ninja Creami.
- Press the “Lite Ice Cream” button. After the first spin, check the texture.
- If crumbly, press “Re-Spin” once or twice until smooth and scoopable.
- Optional: Fold in crushed pistachios or sugar-free chocolate chips using the Mix-In function.
Notes
No instant pudding mix, no protein powder, just real pistachios and vanilla. This recipe is a Dubai dessert–inspired: rich, nutty, and cooling. No Ninja Creami? Add 1/8 teaspoon Guar Gum, blend, pour into a loaf pan, and freeze. Stir every 30 minutes for 2 hours to reduce iciness. Best eaten fresh after spinning. Store leftovers in the Creami container and re-spin before serving.
