Banana Protein Waffles with Pistachio Drizzle
This is a staple breakfast recipe that my entire family enjoys for those quick and easy mornings on the go.
Ingredients
Waffle Batter
- 1 cup1 cup1 cup Oat Milk, Organic, (or any milk of choice works)

- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 1 whole1 whole1 whole Egg
- 1 whole1 whole1 whole Banana, (the more ripe, the more sweet)
- 1 tsp1 tsp1 tsp Vanilla Extract

- 1.25 cup1.25 cup1.25 cup All Purpose Flour
- 2 tsp2 tsp2 tsp Baking Powder

- 1 tsp1 tsp1 tsp Cinnamon, Ground

Toppings
- 0.333 cup0.333 cup0.333 cup Blackberries
- 1 Tbsp1 Tbsp1 Tbsp Powdered Sugar
- 2 tsp2 tsp2 tsp Pistachio Cream, (I used Favuzzi brand)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, add milk, cottage cheese, egg, banana, vanilla extract, and give it a good mix
- Add to that same bowl your dry ingredients; all purpose flour, baking powder, and cinnamon, and mix well
- Grease the waffle maker and use an ice cream scooper to add one scoop of batter to each section
- Close the waffle maker and let them cook for approximately 5 minutes or until waffles are golden (your machine will usually indicate when it’s done!)
- Once cooked, remove from the waffle maker and place on a wire rack to come to room temperature
- Plate your waffles with fruit of choice, icing sugar, and maple syrup
- Finish off your waffles with a drizzle of the Favuzzi pistachio cream
Notes
Store in an air-tight container to enjoy throughout the week
