Almond Thumbprint Cookies (Paleo)
Thumbprint cookies are a classic cookie. You can customize this with whatever jam you enjoy. This recipe is paleo, gluten free, and low in sugar but still super moist and tasty. These cookies are always fun for the holidays, but anytime you will enjoy them.
Ingredients
- 2 cups2 cups2 cups Almond Flour

- 1 Tbsp1 Tbsp1 Tbsp Coconut Flour

- .25 cup.25 cup.25 cup Coconut Sugar

- .12 tsp.12 tsp.12 tsp Sea Salt

- 1 tsp1 tsp1 tsp Lemon Zest
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 2 Tbsp2 Tbsp2 Tbsp Honey

- 111 Egg, Hard Boiled
- .25 cup.25 cup.25 cup Raspberry Jam, any variety you prefer

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees and line cookie sheet with parchment paper. Set aside.
- In a medium bowl combine flours, sugar, and salt. Stir
- In a small bowl combine lemon zest, juice, honey, and egg. Stir to combine.
- Pour the wet ingredients into the dry and stir well.
- Scoop out cookies onto baking sheet. With clean wet hands slightly press each cookie down until flattened on top but still thick.
- Using your thumb (or teaspoon) make an indent in the middle. Using a 1/2 teaspoon fill each well with a dollop of jam.
- Bake for 15 minutes. Turn pan around halfway through.
- Let cool on sheet pan for 5+ minutes before removing.
- Store in airtight container for up to 3 days.
Notes
If you want them a little sweeter after you scoop the cookie dough roll it in granulated sugar or maple sugar then place onto cookie sheet and fill with jam.
