Ingredients
- 111 Autumnal Harvest Creamy Pasta Sauce - Trader Joe's
- 1 cup1 cup1 cup Cottage Cheese, Low-Fat

- 8 sprigs8 sprigs8 sprigs Sage

- Cook the Zucchette Pasta according to the package instructions until al dente. Drain and set aside.
- In a blender or food processor, combine the entire can of Trader Joe’s Autumnal Harvest Soup with the low-fat cottage cheese. Blend until smooth and creamy. You can add a little salt and pepper to taste, but keep in mind that the soup might already contain some seasoning.
- In a large skillet, heat the olive oil over medium-high heat. Add the fresh sage leaves and fry them until they become crispy, about 1-2 minutes per side. Remove the sage leaves and place them on a paper towel to drain. Wipe the pan dry with a paper towel.
- In the same skillet, pour in the blended Autumnal Harvest Soup and cottage cheese mixture, add 1/4-1/2 cup of pasta water and stir to combine. Heat it gently over medium heat until it’s warmed through.
- Add the cooked Zucchette Pasta to the sauce and toss to coat evenly. Cook for an additional 2-3 minutes, allowing the pasta to absorb the flavors of the sauce.
- Season with salt and pepper to taste.
- Serve the Autumn Pasta in bowls, garnished with the crispy sage leaves and a sprinkle of grated Parmesan cheese if desired.
