Lobster BLT
Traded in a version of my favorite lobster salad, for a lobster BLT, and it's sooo tasty!
Ingredients
Lobster BLT
- 1 lb1 lb1 lb Lobster, cooked
- 4 pieces4 pieces4 pieces Bacon, thin cut
- 4 pieces4 pieces4 pieces Butter Lettuce
- 1 whole1 whole1 whole Tomato, Beefsteak
- 1 whole1 whole1 whole Brioche Bread, buns
Tarragon Dressing
- 0.25 cup0.25 cup0.25 cup Mayonnaise
- .25 cup.25 cup.25 cup Buttermilk
- 1 Tbsp1 Tbsp1 Tbsp Champagne Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Tarragon, Fresh
- 2 Tbsp2 Tbsp2 Tbsp Chives, fresh
- 2 cloves2 cloves2 cloves Garlic
- 0.5 whole0.5 whole0.5 whole Shallot, chopped
- 1 tsp1 tsp1 tsp Dijon Mustard
- 0.25 tsp0.25 tsp0.25 tsp Kosher Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a blender or food processor, combine the mayonnaise, buttermilk, champagne vinegar, tarragon, chives, garlic, shallot, Dijon mustard, and salt. Blend until smooth and well combined. Taste and adjust seasoning if necessary, adding more salt or vinegar for acidity. Set aside.
- Preheat the oven to 400°F. Lay the bacon strips in a single layer on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the bacon is crispy. Once cooked, transfer the bacon to a paper towel-lined plate to blot away the grease.
- Slice the brioche burger buns in half. Butter the inside of each bun with a thin layer of butter. Toast the buns, butter side down, until golden brown and crispy.
- In a medium bowl, gently toss the cooked lobster meat with 2-3 tablespoons of the tarragon dressing. Make sure the lobster is well-coated but not mushy.
- On the bottom half of each toasted brioche bun, place two pieces of butter lettuce. Layer with a slice of tomato and two pieces of bacon, then top with the dressed lobster meat.
- Place the top half of the toasted brioche buns on top. Cut in half and serve with a side of fries or a fresh salad
