The new darling cheese offering for your next game-day or weekend gathering you didn’t know you would fall in love with! While brie can be served at room temperature, there’s something about a bubbly version that is so tasty! Serve with my MINI BACON, CHEDDAR & CHIVE PARTY BISCUITS, crackers and fruit. tomato jam

  1. Add all jam ingredients to a small saucepan, stir to combine. Let mixture set for 4-5 minutes to allow the tomatoes to re-hydrate a bit. Heat over medium low to warm through and thicken a bit, stirring occasionally until reduced slightly and warmed. Set aside.

brie wheel

  1. Preheat your oven to 350° - then prepare the wheel of brie by cutting the top in a criss-cross pattern by cutting through the rind in 1” sections, cutting about half way down but not all the way through. Rotate around 45° then cut 1” sections to, creating the criss-cross/diamond pattern.
  2. Place the brie wheel in a small skillet/pan, sprinkle it with salt, adobo seasoning and thyme, then drizzle the top with honey. Bake for 20-25 minutes or until the cheese is bubbly and melty.
  3. Remove from the oven - re-warm tomato jam if needed and spoon on top of the brie and sprinkle toasted pine nuts with a little sprinkle of adobo seasoning or salt.
  4. Serve with standard charcuterie offerings and enjoy!
