Blueberry Cookie Breakfast Pizza
I honestly struggled to come up with a name for this one! It’s like cookie meets pizza meets breakfast! All your favourite things in one, what more could you need... It’s meal prep friendly and ready in less than 15 mins! Be prepared to have your mind blown by this super delish and easy breakfast!
Ingredients
- 0.5 cup0.5 cup0.5 cup Rolled Oats
- 1 whole1 whole1 whole Banana
- 0.5 cup0.5 cup0.5 cup Egg Whites, can sub for another egg
- 1 whole1 whole1 whole Egg
- 2 Tbsp2 Tbsp2 Tbsp Almond Milk
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Blueberries

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 180*C/350*F on GRILL function.
- To a blender, add oats, banana, egg whites, egg, milk, vanilla extract and blend until smooth.
- Heat an oven-proof pan to a medium heat and lightly spray with oil (or just use 1 tsp of oil like me).
- Once pan is hot, add mixture to the pan and sprinkle over blueberries.
- Place a lid over pan and cook until bubbles begin to form (like when making pancakes).
- Place under grill (in oven) until the top has browned (approx 5mins).
- Cut into pizza triangles (if you want the pizza vibe), serve & enjoy!
