This hearty mushroom stew is a comforting dish with bold, earth flavors.  Tender mushrooms are slow-cooked in a rich, savory sauce infused with aromatic green seasoning and thyme.  Simple yet satisfying, it's perfect as a vegetarian main or a flavorful side dish.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. On medium heat, add oil in a saucepan.
  2. Add fresh herbs excluding the thyme and sauté until translucent.
  3. Add tomato paste, cook for 1 minute.
  4. Deglaze with water, add tomatoes, green seasoning, mushroom, thyme and browning. Let cook covered until mushrooms soften (5 -7 minutes).
  5. Add carrots, after 2 minutes turn off heat and set aside while fully covered.
  6. Serve with side of choice, preferably rice and enjoy!
