Ingredients
meatball patties
- 1 oz1 oz1 oz Paleo Sunrise Granola: Hazelnut, Almond Butter & Pecan - Nana Joes, or any nutty granola you like

- 1 oz1 oz1 oz Fine Ground Sea Salt Almond Flour Crackers - Simple Mills, or any GF cracker you like
- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Breakfast Blend - Primal Palate

- 1 lb1 lb1 lb Ground Chicken

- 1 oz1 oz1 oz Salami, Uncured, finely chopped

- 1 oz1 oz1 oz Prosciutto, finely chopped
- 0.25 cup0.25 cup0.25 cup Cottage Cheese

- whipped goat cheese dip (click for recipe)
- caramelized onion jam (click for recipe)
- greek yogurt protein pancakes & waffles (click for recipe), made into a mini size
- Salami, Uncured, diced

- Prosciutto, diced
- Goat Cheese, crumbled
- Basil, Fresh, or fresh herbs of choice, finely chopped

- Paleo Sunrise Granola: Hazelnut, Almond Butter & Pecan - Nana Joes

- Frozen Mixed Berries, diced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
meatball patties
- preheat oven to 400.
- first add granola, crackers, monk fruit, & seasonings to a food processor & blitz a few times into a finer crumble.
- to a bowl, add blended mixture & remaining meatball ingredients.
- using a medium cookie scoop, make mini meatballs (~24) & smash into a flatter patty,
- place meatball patties on a lined baking dish, then bake for 12-15 minutes.
pan-tinis
- make a batch of whipped goat cheese dip & carmelized onion jam.
- in a skillet, reheat mini pancakes by “toasting” for 1-2 minutes on each side.
- on pancake, add whipped goat cheese, meatball patties, caramelized onion jam, & any of the remaining toppings you like.
