Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Drain the canned mackerel and flake it into chunks with a fork.
  2. Wash all the vegetables and spin them in a salad spinner to remove excess water.
  3. Chop the cucumber, cherry tomatoes, olives, dill and onion.
  4. In a large mixing bowl, combine the mackerel, rocket, cucumber, tomatoes, olives, onion, and fresh dill.
  5. In a blender or food processor blitz the keto Ranch dressing ingredients, apple cider vinegar, and olive oil until smooth and creamy.
  6. Pour the dressing over the salad and toss gently until well combined.
  7. Serve immediately or chill for 10-15 minutes for enhanced flavor.

Notes
