- Drain the canned mackerel and flake it into chunks with a fork.
- Wash all the vegetables and spin them in a salad spinner to remove excess water.
- Chop the cucumber, cherry tomatoes, olives, dill and onion.
- In a large mixing bowl, combine the mackerel, rocket, cucumber, tomatoes, olives, onion, and fresh dill.
- In a blender or food processor blitz the keto Ranch dressing ingredients, apple cider vinegar, and olive oil until smooth and creamy.
- Pour the dressing over the salad and toss gently until well combined.
