Cape Malay Lentil Chicken

Ingredients
- 5 whole5 whole5 whole Boneless Skinless Chicken Breasts, cut up in bite sized pieces
- 1 whole1 whole1 whole Onion, chopped
- 1 Tbsp1 Tbsp1 Tbsp Garlic, finely chopped
- 1 Tbsp1 Tbsp1 Tbsp Ginger Root, finely chopped
- 3 Tbsp3 Tbsp3 Tbsp Lemon Juice
- 2 Tbsp2 Tbsp2 Tbsp Light Brown Sugar
- 2.5 tsp2.5 tsp2.5 tsp Kosher Salt
- 1 Tbsp1 Tbsp1 Tbsp Garam Masala
- 2 tsp2 tsp2 tsp Turmeric Powder
- 1.5 tsp1.5 tsp1.5 tsp Chili Powder
- 1 whole1 whole1 whole Russet Potatoes, peeled and diced into half inch cubes
- 1 cup1 cup1 cup Lentils (dried), 1 can drained as a substitute
- 1 cup1 cup1 cup Coconut Milk
- 1 cup1 cup1 cup Chicken Stock
- 3 Tbsp3 Tbsp3 Tbsp Vegetable Oil
- 2 Tbsp2 Tbsp2 Tbsp Apricot Jam (unsweetened)
- 1 cup1 cup1 cup Fresh Herbs, fresh coriander or parsley

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Set the oven to 350 F.
- In a large oven proof casserole pot brown the chicken pieces in 3-4 batches with the vegetable oil. Set she chicken aside. In the same casserole pot sauté the onion until translucent. Lower the heat and add the garlic, ginger and spices. Cook for 10 seconds. Add all the remaining ingredients except for the fresh coriander and apricot jam. Mix well to combine, cover with a lid and bake for 60 mins. During the cooking replenish with chicken stock if the casserole becomes dry. Remove the lid, if casserole is too liquid bake further for 15 min uncovered. Stir in the apricot jam and the fresh coriander. Adjust for seasoning.
Notes
Serve with saffron rice and sambals eg chopped up onion and tomato marinated in lime juice, sliced banana and shredded coconut. Even a sweet fruit chutney adds an elevated twist!
