I love a cheesy, veggie side, and this Cheesy Baked Summer Squash recipe is so easy, so tasty, and so quick. All it takes is a fresh summer squash, some finely shredded hard cheese, and heat from pepper flakes to whip up a tasty, cheesy veggie side to your main. One could also snack on these as I did!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 425 F
  2. Slice the summer squash in to 15 - 20 equal sized pieces, roughly 1/4" thick. Line them up on a parchment lined baking sheet that's been sprayed with cooking spray. Season each slice with Himalayan salt & cracked pepper.
  3. Finely grate enough hard cheese to top each slice with a nice nest of cheese. Finish by topping each slice with a pinch of red pepper flakes.
  4. Bake 15 - 20 minutes until squash is tender and cheese is golden brown. If needed / desired, switch the oven to broil for a minute to really brown up that cheese. Watch the zucchinis after the 15 minute mark to ensure they do not burn.
  5. Remove and sprinkle each slice with freshly chopped chives. Serve & ENJOY!
