  1. Melt butter in a pot over medium heat. Add ground beef and all spices. Stir 30 seconds to bloom the spices, then brown the beef until no pink remains.
  2. Stir in tomato paste and diced bell pepper. Cook 1 to 2 minutes until the pepper softens and the paste darkens slightly.
  3. Pour in beef broth and bring to a simmer. Simmer 10 minutes.
  4. Turn off heat. Stir in Parmesan until melted.
  5. Blend cottage cheese until completely smooth (immersion blender or food processor).
  6. Wait until bubbling stops, then stir in blended cottage cheese until the soup is creamy and smooth.

Notes

Do not skip blending the cottage cheese. It needs to be smooth before it goes in, or the texture will be unpleasant. Add cottage cheese off heat after bubbling stops to keep the soup creamy. For richer flavor, keep the beef fat in the pot. Drain it if you prefer a lighter soup. Noodles go in the bowl, not the pot, so the soup stays thick and not watery. Swaps change nutrition.
