  1. preheat oven to 400.
  2. in a bowl, toss chicken with salt & pepper.
  3. to a large skillet, sear diced chicken in a little fat, then transfer to a large bowl.
  4. to the bowl, add ranch dressing, bacon, veggies, & ~1 cup cheese; mix well.
  5. add chicken mixture to a 9X13 casserole dish, then cover & bake for 15 minutes.
  6. remove casserole from oven, uncover, & add additional cheese on top.
  7. bake for another 10-15 minutes (or until chicken reaches internal temperature of 165), with option to broil for last 3-5 minutes.
