Chicken Corn Pumpkin Chowder
I love a good soup or chowder. This dish is perfect for weeknights when you want flavor and nutrients in one pot. The corn milk enhances the corn flavor. Enjoy
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp ARGILOS IV MILD Extra Virgin Olive Oil (500ml) - Argilos

- 333 Chicken Breast, cut into bite size pieces

- .5.5.5 Red Onion, small dice
- 222 Carrots, small dice
- 222 Celery, small dice
- 111 Bell Pepper, small dice
- 2 cloves2 cloves2 cloves Garlic, Minced

- 333 Yukon Gold Potatoes, small dice, or sweet potato
- 1 tsp1 tsp1 tsp Sea Salt

- 1 tsp1 tsp1 tsp Black Pepper

- .5 tsp.5 tsp.5 tsp Cumin, Ground

- .5 tsp.5 tsp.5 tsp Parsley, Dried

- 3 cups3 cups3 cups Chicken Bone Broth

- 1 cup1 cup1 cup Cornmilk - Maizly

- .5 cup.5 cup.5 cup Pumpkin Purée
- 1 cup1 cup1 cup Frozen Corn
- 222 Green Onion (Scallion), sliced

- 1 cup1 cup1 cup Aged Cheddar Cheese, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a Dutch oven cook the chicken in oil on medium heat for 8 minutes, stir periodically.
- Add the vegetables and seasonings, stir and cook for 5 minutes.
- Add the broth, corn milk, and pumpkin, stir and cook for 20 minutes on low temperature.
- Add frozen corn and cook for 5 minutes.
- Check the doneness of potatoes. If done, dish up and enjoy. If not cook for 5 minutes more.
- Dish up into bowls.
- Top with toppings.
Notes
You can also top with Greek yogurt or sour cream, or avocado. For the bone broth you can use stock/broth or even vegetable broth. It all works. And you can add one cup extra to the chowder if you’d like it more soup like.
