Chocolate Peanut Butter Balls (Edit recipe)

I love the flavors of chocolate and peanut butter! I think they are a marriage made in sweet heaven. This recipe uses only a little peanut butter and mostly almond butter but you still get that yummy peanut taste. Of course you can use all almond butter and they are still delicious so don't let that stop you from trying this recipe. So fun and easy, get the kids involved. This is a great summer treat because it is no bake.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add all the Ball ingredients to a bowl and stir until combined.
  2. Using a small ice cream scoop place balls onto a parchment paper lined cookie sheet. You can briefly roll each one in the palm of your hands to smooth them out if you like.
  3. Freeze balls for 30-45 minutes.
  4. While the balls freeze prepare chocolate shell.
  5. In a double boiler (or glass bowl over a small amount of water in pan) on low heat melt the chocolate, oil, and salt. Stir to ensure even melting. If water is too warm the chocolate will get too hot. Better to take your time and melt it slowly.
  6. Quickly roll each ball in the chocolate and cover until fully coated. A small fork or spoon works best.
  7. Place back on the baking sheet and repeat.
  8. Return cookie sheet to freezer for 30 minutes.
  9. When set place in air tight container, one level high, and refigerate. Enjoy
