Easy Carne Asada
This spicy beef is so packed with flavor and versatile you will find yourself frequently putting it in your menu rotation. I have taken the traditional carne asada creations that take hours of marinade time and grilling and created a quick easy version. Try it, you’ll love it!
Ingredients
- 1.5 lb1.5 lb1.5 lb Flank Steak, Skirt or ribeye work as well
- 2 Tbsp2 Tbsp2 Tbsp Lard, Or other oil
- 1 tsp1 tsp1 tsp Sea Salt, Course ground if available
- 1 tsp1 tsp1 tsp Black Pepper
- .33 cup.33 cup.33 cup Red Enchilada Sauce - Siete Foods
- .33 cup.33 cup.33 cup Chipotle Peppers in Adobo Sauce, Chopped
- .33 cup.33 cup.33 cup Beef Broth
- 1 whole1 whole1 whole Onion, Any color, sliced
- 1 whole1 whole1 whole Bell Pepper, Any color, sliced
- 1 whole1 whole1 whole Jalapeño, Seeded and sliced
- 2 cloves2 cloves2 cloves Garlic, Minced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In the Instant Pot set on sauté sear the flank steak, with salt and pepper, in oil for 4 minutes each side, just to brown.
- Turn the setting to slow cook.
- Add the remaining ingredients and slightly stir to coat everything in sauce.
- Cook on low for 6-8 hours.
- When done the beef will shred apart with a fork.
Notes
Use the beef and vegetables in tacos, burritos, on a salad, on nachos, or in a rice bowl. Top with sour cream, guacamole, cilantro, and lime. To save time you can use the pressure cooker setting and cook on medium-high for 20 minutes and let pressure release naturally.
