Coconut Palomas Recipe
I added a creamy twist to the classic grapefruit Paloma, inspired by one of my dad’s favorite cocktails. It's fun, festive, and still balanced enough to sip all afternoon or while watching the big game. Whether you make it as a mocktail or a cocktail, it is a fresh take on a classic that does not take itself too seriously. Provecho amigos.
Ingredients
Pitcher
- 1.5 cups1.5 cups1.5 cups Grapefruit Juice
- .5 - 0.75 cups.5 - 0.75 cups.5 - 0.75 cups Tequila, ALMAVE Blanco, NA Silver Tequila, Can Substitute for any silver tequila
- 0.333 cup0.333 cup0.333 cup Cream of Coconut, Sweetened
- 0.25 cup0.25 cup0.25 cup Meyer Lemon, freshly squeezed, lemon juice works great as well!
- 24 fl oz24 fl oz24 fl oz Sparkling Water, Coconut - LaCroix, any flavor water will work,
- 24 fl oz24 fl oz24 fl oz Citrus Soda, Original Grapefruit - Fresca, OPTIONAL- in place of soda water, can use Fresca for a sweeter taste
- 0.333 cup0.333 cup0.333 cup Freeze-Dried Grapefruit Slices - CITREVE, plus more for garnish

- 1 pinch1 pinch1 pinch Salt

Garnish
- 0.333 cup0.333 cup0.333 cup Lemon Juice, for rimming
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Tajín Clásico Seasoning

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a 1-quart pitcher or large mason jar, combine the grapefruit juice, non-alcoholic tequila (or silver tequila), cream of coconut, Meyer lemon juice, and salt. Add about 2-3 freeze-dried grapefruit slices and stir well to combine.
- Cover and refrigerate for at least 30 minutes, or up to 2 hours, stirring once or twice. This allows the grapefruit flavor to infuse and keeps the coconut from overpowering the drink.
- Remove from the refrigerator and remove the grapefruit.
- Ad ice to pitcher.
- Just before serving, gently stir in the sparkling water to pitcher.
- Rim each glass with Meyer lemon juice, then dip into Tajín.
- Fill glasses with ice, pour the paloma over ice, and garnish with additional freeze-dried grapefruit slices. Provecho amigos!
Notes
- If preparing in advance, hold off on adding the sparkling water until just before serving. This keeps the drink fresh and lets everyone adjust sweetness and fizz to their liking.
- Use either the sparkling water OR the Fresca grapefruit soda, not both together. The Fresca soda definitely makes the sweet a bit sweeter.
- For a lighter drink, add extra sparkling water to individual glasses.
- If serving both mocktails and cocktails, keep the batch non-alcoholic and add tequila to individual glasses as needed.
