Fudgy Cassava Brownies (Edit recipe)

Move over boxed brownies, these cassava grain free brownies are the real deal! This recipe will make all your brownie dreams come true!  Best part about them is how quickly they come together and how fudgy they are. The folded mini chocolate chips help make these so decadent and moist- did I mention they were Paleo?!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. In a microwave safe bowl, melt butter. Then, stir in chocolate chips. Stir until chocolate is fully melted and smooth. Set aside.
  2. 2. In a stand mixer, beat eggs and coconut sugar on medium for 2 minutes. The sugar and eggs get frothy and creamy when well combined.
  3. 3. Next, pour melted chocolate mixture into stand mixer bowl. Beat until combined.
  4. 4. Add cocoa powder, cassava flour, vanilla extract, maple, cinnamon, & nutmeg. Stir to combine. Lastly, add remaining mini chocolate chips and gently mix.
  5. 5. Pour batter into lined baking pan or oiled pyrex dish. Add to preheated oven (350 F).
  6. 6. Bake for 12 minutes. Remove pan from oven and gently bang pan on countertop 2 to 3 times to release air bubbles.
  7. 7. Return pan to oven and cook an additional 12 to 15 minutes, or until a toothpick inserted comes out clean.
  8. 8. Remove from oven. Sprinkle with sea salt or top w powdered sugar.
