Cookie Dough Energy Bites
My *famous* cookie dough energy bites, I should say! These were my most popular website recipe in 2021 and 2022, and were also sold in a coffee shop. Now, this is the only place you can find this recipe since my website is no longer running. These are SUPER delicious - the best texture, a mix of salty and sweet, and filling. I like to have these as a midday snack to get me through until dinner since I hit a big bout of hunger around 3-3:30pm. These make a great snack for kids and adults, people love them for pre and post workout, and they're wonderful for breastfeeding or pumping mamas!
Ingredients
- 1 cup1 cup1 cup Oats, Rolled, blended into a flour-like consistency
- 0.5 cup0.5 cup0.5 cup Creamy Peanut Butter
- 0.333 cup0.333 cup0.333 cup Maple Syrup, Pure, can use honey
- 0.25 cup0.25 cup0.25 cup Coconut Flakes, unsweetened, shredded
- 0.25 cup0.25 cup0.25 cup Flax Seed Meal, can use chia seeds
- 0.333 cup0.333 cup0.333 cup Mini Chocolate Chips, Semi-Sweet, or as many as you like

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add oats to your blender and pulse into a flour-like consistency. It's okay if there are some larger oats/pieces!
- Add all ingredients to a bowl and mix until fully combined.
- Using a 1 tablespoon measuring spoon, measure out cookie dough bites.
- Roll between your palms and set aside in a container.
- Store in the fridge or freezer and grab as needed!
Notes
These are really easy to make, and I recommend not skipping the blending of the flour. It helps to make a good consistency. If you like these, you can double the batch! This is best for having a larger amount in the fridge/freezer, and not having to make them as often. They stay well for a while!
